Born into an Italian immigrant family in Argentina, Paulo Airaudo’s culinary journey is deeply rooted in his personal and cultural heritage. Having worked at The Fat Duck, the iconic Michelin three-star restaurant in the UK, he has risen to become one of the world’s most acclaimed chefs. The mastermind behind the Michelin-starred Amelia, Aleia and Ibai in Spain and Noi in Hong Kong, he now oversees an empire of 14 global restaurants.
